When making tofu at home, controlling water extraction is crucial for achieving the desired texture. An electric tofu press simplifies this process by allowing you to adjust weight settings precisely. The weight, measured in pounds or kilograms, determines how much pressure is applied to the tofu curds.
For soft tofu, light pressure (around 5–10 lbs) is ideal. This setting gently expels excess water while retaining a creamy interior. Additionally, place a layer of cheesecloth between the tofu and press plate to absorb water without clogging the drainage system.
